Leo Season Crunchy Watermelon Salad

It’s the heart of Summer, which means it’s peak watermelon season! Salads are my favorite way to enjoy this incredibly sweet, refreshing and hydrating fruit - which is why I want to share this super simple, easy and delicious crunchy watermelon salad with you.

I personally love adding herbs and nuts to salads , it gives them such amazing texture and extra flavor! You have the freedom to use any herbs you’d like for this salad, I combined freshly chopped mint, basil and cilantro - super herby! You can use just one of these herbs, all three, or even more if you want! I also like adding nuts because of the extra protein.

INGREDIENTS

  • 1 medium sized watermelon, cubed

  • 3/4 cup toasted almond slivers

  • 1/2 cup chopped herbs

  • 1/2 cup lime juice

  • Salt - sprinkle to your liking

  • Red pepper flakes - optional for those who like the spice!

TO MAKE

  • Add watermelon cubes to a large serving bowl

  • Add salt, pepper flakes, lime juice and toss

  • Top with almonds and herbs

  • Toss again before serving
