TikTok Inspired Pan Fried Zucchini with Dill!
This is my take on a TikTok Recipe I saw from @healthyishfoods - I had to make it shortly after seeing it because she made it look so good! This dish is super easy to make, flavorful, has great textures and makes a perfect side dish - plus, you feel so good eating it! All you need is Zucchini, dill, vegan feta cheese, toasted pecans, lemon, salt & pepper and maple syrup. I really loved how all of these different flavors came together!
INGREDIENTS
Zucchini
Fresh Dill
Olive Oil
Salt
Pepper
Lemon Juice
Toasted Pecans
Vegan Feta Cheese
Maple Syrup
TO MAKE
Slice zucchini in half length-wise, then slice into triangles or cubes, season with salt and pepper
Heat oil in a pan over medium high heat
Place zucchini pieces in the pan, flat side down - let fry for several minutes, you want the bottoms to be nice and brown!
Once cooked to desired softness, remove from heat and transfer to a serving dish
Top with chopped dill, pecans, feta, lemon juice and maple syrup. *For some spice you can also add red pepper flakes!
