Snack Mix: Coconut Lime Popcorn & Peanuts

Who doesn’t love a good snack for watching your favorite shows? I have just the recipe for you! This vegan friendly, sweet, salty and citrusy popcorn mix will have you filling your bowl a few times. Warning, this mix is extremely addictive! I first created it a few years ago when I was a food blogger and a popcorn brand reached out to me wanting recipe ideas - I still own it though, haha!

I love it because it combines some of my very favorite flavors: coconut, peanuts and lime! And it’s so satisfyingly crunchy! It’s also really easy to throw together.

Ingredients

  • 6 cups salted popcorn

  • 1/2 cup melted coconut oil

  • 1/4 cup maple syrup

  • Zest of 2 limes

  • 2 extra limes for wedges

  • 2 cups salted peanuts

  • 1 1/2 cups toasted coconut flakes

To Make

  • Pour popcorn and peanuts into a large bowl

  • Toast coconut shreds in a pan on medium heat until just golden brown

  • Mix coconut shreds with popcorn and peanuts

  • Whisk coconut oil and maple syrup together in a pan on medium heat until well combined

  • Drizzle coconut oil and syrup dressing over bowl of popcorn

  • Add lime zest

  • Using a large spoon or spatula combine all ingredients until well blended

  • Scoop servings into cups, top with lime wedge and serve
