Crispy Pineapple & Veggie Fried Rice
๐Crispy Pineapple Veggie Fried Rice๐ Not reinventing the wheel here, but just sharing a quick and easy fried rice you can make! Plus, if you have leftover rice and veggies in the fridge already, this is how you can make a meal without anything going to waste! I like this combo of pineapple, red bell pepper, and broccoli - you can also add tofu if you have some! Colorful and flavorful! ๐
INGREDIENTS
โ Leftover rice, brown or white
โ Pineapple chunks, fresh or frozen
โ One sliced red bell pepper
โ One-head of broccoli florets
โ Chopped green onion โ Cooking oil - olive, coconut or sesame
โ Garlic, fresh or ground
โ Red pepper flakes
โ 1 TBS. Soy sauce
HOW TO MAKE
โ Heat a pan over medium-high heat
โ Add desired amount of oil to coat the bottom of the pan
โ Let it get nice and hot, but not smoking!
โ Add the pineapple chunks - let them sit and brown on the bottom then flip.
โ Add broccoli florets, and rice, season with garlic powder, red pepper flakes, soy sauce - make sure everything is spread out evenly so the bottom of the rice can brown and crisp, let it sit for a few minutes.
โ Flip the rice and add sliced peppers, green onion - again make sure everything is evenly spread out. Add more oil if you need to. Let rice sit and crisp a few more minutes. Rice should make a sizzling noise.
โ When veggies are slightly soft and the rice is nicely browned, get ready to serve!
