Vegan Chickpea Curry with Brooklyn Delhi Golden Curry Simmer Sauce
Easy Vegan Chickpea Curry Recipe π
I LOVE πΆ curry and this dish turned out very well! π₯£ Packed with flavor, veggies and of course chickpeas which are so filling and nutritious! This took about 20 minutes to make and lasted me a few days - a must make! Serve with potatoes, rice, noodles or anything else! πππ²
Ingredients
β 2 Tbs coconut oil
β 1/2 Jar @BrooklynDelhi Golden Coconut Curry Sauce
β 1/2 Cup Coconut Milk
β 1 can roasted, diced tomatoes strained
β 1 can chickpeas, rinsed
β Half an onion chopped
πHow To
1. SauteΜ onion in coconut oil for about 5 minutes
2. Add Curry Sauce, Coconut Milk, Tomatoes and Chickpeas
3. Stir together, cover and simmer for 20 minutes.
4. SERVE!
*Optional toppings: πΏChopped Mint, Yogurt (dairy free to keep it vegan)
