I LOVE 🌢 curry and this dish turned out very well! πŸ₯£ Packed with flavor, veggies and of course chickpeas which are so filling and nutritious! This took about 20 minutes to make and lasted me a few days - a must make! Serve with potatoes, rice, noodles or anything else! πŸšπŸœπŸ²

Ingredients

βœ…2 Tbs coconut oil

βœ…1/2 Jar @BrooklynDelhi Golden Coconut Curry Sauce

βœ…1/2 Cup Coconut Milk

βœ…1 can roasted, diced tomatoes strained

βœ…1 can chickpeas, rinsed

βœ…Half an onion chopped

πŸ‘‡How To

1. Sauté onion in coconut oil for about 5 minutes

2. Add Curry Sauce, Coconut Milk, Tomatoes and Chickpeas

3. Stir together, cover and simmer for 20 minutes.

4. SERVE! 

*Optional toppings: 🌿Chopped Mint, Yogurt (dairy free to keep it vegan)
