Sagittarius Inspired Pumpkin & Roasted Garlic Hummus!
If you’re not tired of all things Pumpkin, this hummus is for you! Did you know that hummus is a staple not only in Israel, but also Palestine, Egypt, Greece and other Middle Eastern and Mediterranean countries? It’s one of the most international snacks you can eat! So in line with Sagittarius’ love for long-distance travel and different cultures!
I can tell you that my holidays are never complete without this dish! This recipe is meant to inspire you and make you feel like you’ve taken a journey with just one taste of these delicious flavors!
This hummus is special, it combines pumpkin, chickpeas, olive oil, maple syrup, roasted garlic and fresh herbs - topped with pomegranate seeds and vegan feta cheese! I love the flavors together so much and all of the ingredients are super healthy - pomegranates are one of the best superfoods because of their high level of antioxidants!
This recipe comes together really easily and again, the pomegranate seeds really make it pop - they are a nice tart contrast to the spicy garlic. If you love hummus, you’re in for a treat! I recommend serving with nut crackers, or toasted naan bread and feel free to make any adjustments that suit your own taste!
Ingredients
✅ 1/3 Cup Pumpkin Puree
✅ 1 Can Chickpeas (rinsed)
✅ 3 Cloves Roasted Garlic
✅ 3 Tbs. Olive Oil
✅ 1 Tbs. Cold Water
✅ 1/4 Tsp. Salt
✅ 1 Tsp. Thyme
✅ 1 Tsp. Honey
Add all ingredients except for thyme into a blender, pulse until creamy and smooth. Stir in thyme, top with pomegranate seeds and dairy-free feta, drizzle with more olive oil. Enjoy!
