Gluten Free, Vegan Peach and Herb Crisp

Peaches are my absolute favorite fruit of all time. If you wanted to impress me, you could just give me a box of peaches and I'd probably be wrapped around your finger forever! ๐As you can imagine, I get very excited in the Summer when peach season arrives -- and we are in it right now and I'm LOVING it! I'm also pretty into herbs - so anytime I can add them to a recipe, I will! This Summer, I have been growing my own basil, sage and oregano. I decided to use the sage and basil with the peaches - adds a nice flavor contrast to the sweet peaches. AND what better way to eat them than in a crisp?! You can eat a crisp as a dessert OR breakfast which makes it a big winner in my book...haha.

INGREDIENTS
Yellow or White Peaches - 4
Brown Sugar - 1/2 cup,
4 TBS Basil & Sage - To your liking
Lemon Juice - 1-2 TBS
Plant-based butter 8 TBS - melted
Cinnamon - 1 TBS
Salt - 1-2 TSP
Oatmeal - 1 Cup
Gluten Free All Purpose Flour- 1 Cup
ASSEMBLY
Preheat oven to 350 degrees, prep glass baking dish.
Slice your peaches and chop the herbs and mix in medium sized bowl with some lemon juice and 4 TBS brown sugar.
In a separate bowl, mix oats, 1/2 cup brown sugar, gluten free flour, cinnamon, plant based butter and salt.
Make a layer with the peach and herb mixture in the glass dish. Top peaches with crisp mixture.
Bake for 45 minutes to an hour depending on how "crisp" you like your crisp!
