🍋Gluten Free Lemon Chia Loaf🍋

When you have extra lemons - make dessert! I LOVE the flavor of lemon in my desserts, so this loaf was a no brainer. This recipe could also be made with poppy seeds, but I only had chia seeds to work with, which are just as great! My recipe is #glutenfree and #dairyfree - made with @bobredmill flour, but of course could be altered to your preferences. BTW it's delicious lightly toasted and dunked in your morning or afternoon coffee! Let me know if you make it!

🍞Loaf Ingredients

âś…2 cups gluten free flour
âś…2/3 cup brown sugar
âś…2 tablespoons chia seeds
âś…1 teaspoon baking powder
âś…1/2 teaspoon baking soda
âś…pinch of salt
âś…2 eggs
âś…1/4 cup coconut oil
âś…4 tablespoons lemon juice
âś…2 tablespoons lemon zest
âś…1 teaspoon vanilla
âś…1/2 cup almond or oat milk

Directions

âś…Preheat oven to 350 degrees
Grease a loaf pan, or muffin tins. 

âś…In a large bowl combine flour, salt, baking powder, baking soda and brown sugar - whisk until evenly blended. 

âś…In a medium bowl, mix together eggs, milk, oil, vanilla, lemon juice and lemon zest until well blended. 

âś…Pour wet ingredients into the dry ingredients, whisk together until there are no lumps. Stir in chia seeds. 

âś…Pour into loaf pan, place in oven for about 30 minutes until baked through. 

âś…Let cool. 

âś…Drizzle with icing and sprinkle with extra powdered sugar.

âś…Squeeze more lemon juice and mix with powdered sugar
