Banana Coconut Oatmeal
π Banana Coconut Oatmeal! Having a plant based breakfast is easy and delicious! We all know that oats are incredibly healthy for us for a few reasons, but also, they are much easier on the planet than a bacon, egg and cheese sandwich! Oats are a low-input crop, meaning they require fewer resources to produce than other grains such as corn or wheat. As a crop, they are also great for carbon sequestration (the process of capturing and storing atmospheric carbon dioxide - a method of reducing the amount of carbon dioxide in the atmosphere with the goal of reducing global climate change. - U.S. Geological Survey).
I love this combo - banana, coconut, cinnamon and maple syrup, but there are a million ways to top your oatmeal! What are some of your favorite toppings?
To Make:
Cook oatmeal on the stove, adding some salt and cinnamon, stir until it is a nice thick consistency.
Serve in a bowl and top with sliced bananas, shredded coconut, and maple syrup.
