Another Day Greener Veggie Burgers
π Another Day Greener #Veganuary Burgersπ Here's a super delicious way to get in as many greens as possible into one meal! I love making veggie patties - it's so fun to get creative with flavors and ingredients! These patties are chickpea and potato based with mixed in onions, mint, dill, basil and seasonings - then topped with cucumber, spinach and avocado! The perfect #veganuary burger! Recipe below. π
INGREDIENTS FOR VEGGIE PATTIES
β 1 can chickpeas, drained & rinsed
β 1 1/2 cooked potatoes (regular or sweet)
β 1/2 cup cooked brown rice
β Chopped Herbs: Mint, Basil, Dill
β Seasonings: Turmeric, Cumin, Salt & Pepper
β 3 Tbs. Oat flour
β Diced green and white onion
β 2 Tbs. Olive Oil (add more if needed)
TOPPINGS
β Cucumber
β Spinach
β Avocado
β Vegan Cheese
β Mustard
TO MAKE
β Mix all ingredients together in a bowl, use a masher to smush potatoes and chickpeas.
β Once everything is combined, you should have a thick veggie "dough", shape into patties with your hands.
β Heat a large pan on med/high with a good layer of olive oil.
β Place patties in oil, flip after a few minutes. Fry the other side for about 5 mins.
β Once cooked, build your burger!
