Dairy Free Sweet Potato Quesadillas
Quesadillas have always been a simple go-to meal for me ever since I was little! They are definitely one of my favorite comfort foods. During a recent camping trip I realized I had all of the ingredients to make a delicious sweet potato quesadilla! Fun to make and so satisfying. Cutting out dairy from your diet is easier than you might think....and by doing so, you are helping to cut back on the greenhouse gas methane! Plus, sweet potatoes are such a great source of vitamins and minerals, like beta carotene, vitamin C and potassium! I also highly recommend Daiya brand vegan mozzarella cheese, it melts very well and tastes great.
INGREDIENTS:
Corn or flour tortillas - I used corn
Daiya Mozzarella
Pre-cooked and cubed sweet potatoes
Diced green pepper
Diced yellow onion
Extra Virgin Olive Oil
TO MAKE:
Heat oil in a pan over medium heat
Top open tortilla with cheese, potatoes and veggies and fold over
Place folded tortilla in the oil, cook both sides until brown and crisp
Remove and enjoy!
