Crispy Tofu & Avocado Salad
π₯ CRISPY TOFU & AVOCADO SALAD π₯
Yep, still obsessed with summer salads π₯over here! This one is delicious and plant protein packed so you can feel full and ditch the meats! Plus we're using nutrient-rich spinach for our greens giving us a good dose of iron, vitamin c, vitamin k, folic acid and calcium! This recipe includes crispy tofu, sweet potatoes and quinoa which you will want to make ahead of time. Then everything will just be ready for assembly!
You want to start with crisping your tofu - I buy extra firm, drain it and squeeze out the extra moisture, cut it into chunks, toss in some corn starch, salt & pepper and crisp in the air fryer or pan with some coconut oil. Then it's ready for your salad! You can also prep your sweet potato cubes ahead of time by boiling or roasting, then cutting them into cubes.
Ingredients for Salad
β Fresh Spinach
β Cooked quinoa
β Cubed sweet potatoes (pre-cooked)
β Crispy tofu
β Avocado (sliced)
β Everything but the bagel seasoning
Ingredients for Dressing
β BBQ Sauce - 1 - 2 TBS.
β Soy Sauce - 1 Tsp.
β Sesame Oil - 1 Tsp.
β Rice Wine Vinegar - 1/2 Tsp.
TO MAKE
β Prep tofu, potatoes, quinoa ahead of time
β Whisk dressing ingredients in a bowl
β Layer spinach on the bottom of your plate
β Add quinoa
β Add sweet potatoes
β Add Avocado
β Add Crispy Tofu
β Pour dressing over salad, sprinkle everything but the bagel seasoning
